Himachal sirf apne barfani pahaadon ke liye nahi, balki apni anokhi sanskriti aur lajawab khane ke liye bhi jaana jata hai. Kya Hoti Hai Himachali Dham?

Dham ek paramparik thali ya feast hai jo tyoharon, shaadiyon aur bade sanskritik utsavon par banayi jaati hai. Iski sabse badi khasiyat ye hai ki isme pyaz, tamatar ya lahsun ka use nahi hota, fir bhi iska swaad bemisaal hota hai. Is pure khane ko zameen ke andar ek gahri khee (Toti/Charoti) mein lakdi ki aag par dhime-dhime pakaya jata hai.

Botis aur Pattal: Khane Ka Traditional Tarika

Dham banane wale special chefs ko **Botis** kaha jata hai, jo peedhiyon se chali aa rahi secret recipes se is khane ko taiyar karte hain. Log zameen par ek line (Pangat) mein baithte hain, aur khana patton se bani thaliyon par parosa jata hai jise **Pattal** kehte hain. Yeh tarika ekdum eco-friendly aur organic hai.

Dham Ke Mukhya Vyanjan (The Menu)

Alag-alag districts (jaise Kangra, Mandi, Chamba) mein Dham ka menu badal jata hai, par kuch chizen hamesha mukhya hoti hain:

  • Madra: Kabuli chane ya rajma ko dahi aur shahi masalon ke sath dhimi aag par pakaya jata hai.
  • Khatta: Amchoor ya imli se bana ek khatta-meetha vyanjan jo digestive system ke liye bahut badhiya hota hai.
  • Mash ki Dal: Dhuli urad ki daal jise dhuen (Dhungar system) ka tadka diya jata hai.
  • Meetha: Daawat ka anth meethe chawal (Badana ya Seera) ke sath hota hai.
